Italy knows how to climb. And springtime is THE time. Leave Chamonix via the tunnel arrive at Pilier Centrale (run by the same family that runs Rifugio Torino) for a cappuccino go-go 25 minutes later.
Fully primed, head to any number of the crag and multi-pitch options, all perched above ancient fortresses, churches, and ruins. And then wrap up the day with the best gelato you can imagine. Repeat as necessary.
