Over a two year process, Scully and his chefs ferment cheese rinds, taking inspiration from ancient Roman and Japanese methods, to turn the leftovers into a garum that can be used in everything from mash to cheesecakes.

DJ BBQ is a live-fire legend, author of multiple cookbooks (including Fire Food and The Burger Book), and a regular face on Jamie Oliver’s FoodTube. He’s been bringing the noise, and the smoke, to food festivals across the UK for years, blending his love of barbecue and music into a style all his own.
Born in Malaysia and raised in Sydney, Scully's culinary style is a vibrant tapestry woven from his Chinese, Indian, Balinese, and Irish heritage. His innovative approach has been honed through years of experience, including a significant tenure as head chef at NOPI, where he collaborated closely with Yotam Ottolenghi.

We love surprise specials here. One of our favourites is our Malaysian Layer Cake dessert, topped with a delicious spiced condensed milk.
We bake it layer by layer, with five minutes for each layer under the salamander grill. Because it takes a lot of time and love to bake it to perfection, we don’t have it on the menu regularly - so if you do spot it, make sure you order it, as you won’t know when it’ll next be there to enjoy!
