Literally meaning “Rolled Lasagna”, this dish is a variation of the original. Instead of layers of pasta filled with Ragu and cheesy goodness, it is one giant pasta sheet, layered with tomato, ricotta and basil. Rolled into a giant log and cut into pinwheels.

@motorcityseafoodco scallop tartare, dressed with scallop mayo and alliums. Hidden underneath is a vibrant wild fennel salsa and crispy puffed farro. Tableside pour of house made almond milk infused with saffron and fennel frond oil
Visited the facility that processes @shewolfdetroit 's compost, as well as their aquaponic system for growing the most delicious lettuce. Learned a lot of new words as well as how much ingenuity goes into turning "junk" into composted soil.
