Fudgy chocolate banana cake with mocha whipped cream. A deeply chocolatey rich sponge moistened with banana which also adds natural sweetness and a subtle caramel undertone. Finished with dark chocolate shavings. I actually made the chocolate sponge the night before then assembled and served the next day- it stays incredibly moist and soft from the whipped egg whites and olive oil used in the batter that help maintain freshness! Absolutely loveddddd this one. The chocolate is perfectly balanced, not overly sweet and pairs beautifully with the banana and subtle mocha flavour! High-protein pistachio energy balls 🌱 Gluten-free, vegan & refined sugar free! Ingredients: 60g shredded coconut 60g pistachios 75g almond flour 2 tsp tease matcha powder Pinch salt 6 large medjool dates 65g cashew butter 2 tbsp coconut oil 1-2 tbsp coconut cream 2 tsp tease vanilla extract Instructions: 1. De-pit the dates, and soak in a bowl with warm water. Set aside for 15 minutes then remove the water. 2. In a blender or food-mixer, combine the softened dates, cashew butter and coconut cream. Blend until completely smooth and creamy. 3. Add the pistachios and shredded coconut and pulse until finely ground. 4. Add the almond flour, matcha, coconut oil, vanilla, salt. Blend briefly until a dough forms. It should be thick and resemble cookie dough. 5. If it feels too dry or crumbly, add 1tsp of cashew butter or an extra date and blend again until desired consistency is achieved, 6. Use your hands to roll into small balls, immediately toss in shredded coconut flakes, then serve and enjoy! Note: Store in the fridge in an airtight container, not at room temperature.

brown butter dark chocolate chip cookies (Recipe below). Super chocolatey and gooey cookies with rippled edges and glossy puddles of chocolate throughout. I let the dough chill in the fridge overnight and all they needed was 8-9 minutes in the oven!… Follow me for more recipes ! πŸ’– Ingredients β€’ 100 g salted butter, browned β€’ 130 g dark brown sugar β€’ 1 large egg β€’ 1-2 tsp pure vanilla extract β€’ 170 g all-purpose flour β€’ ΒΎ tsp baking soda β€’ Β½ tsp cornstarch β€’ 120 g chocolate chunks (use a dark chocolate bar roughly chopped into pieces) β€’ Flaky sea salt, for topping (optional) 1. In a pan, melt the butter over medium heat, stirring until it turns foamy and amber brown with golden flecks. Remove from the heat and pour into a large bowl (scrape in all the brown bits) and cool 10–15 min until warm but not hot. 2. Add the brown sugar to the butter and whisk until glossy and smooth. 3. Add the egg and vanilla, whisk until thick, lighter, and shiny. 4. In a separate bowl, whisk together flour, baking soda, cornstarch and salt. Fold into the wet ingredients with a spatula until just combined. 4. Fold in the chocolate chunks, saving a few for the tops of the cookie. 6. Cover and chill the dough for 1 hour, preferably overnight. 7. To bake, scoop roughly 50g of dough per cookie and roll into balls. Don’t smooth the top of the ball as the rough texture helps create nice ripples. Add extra chocolate pieces on top for melty chocolate bits. 8. Place the cookies on a baking tray lined with parchment paper, leaving space to spread. 10. Preheat the oven to 170Β°C and bake for 8-9 minutes until golden on the edges and soft in the middle. 11. After baking, shape the cookies with a larger glass to make them more circular, and sprinkle flaky salt. 12. Let cool for 5-10 minutes before serving.
