I absolutely loved how this one turned out ā a delicate tartlet filled with silky crĆØme pĆ¢tissiĆØre, layered with beautifully tart rhubarb, then finished with fresh thyme, lemon zest and a scattering of rose petals.
A perfect balance of sharp, sweet and floral⦠this one might need a permanent spot on the menu.

Itās been all about private dining & shoot lunches so far this month. The problem with that is that food leaves for the table so fast I canāt get a decent photo!
This was the menu for last Saturday: the most light and delicate smoked salmon with apple & fennel slaw. Mains was pan fried sea bass and dessert, apple tarte tatin with freshly made vanilla ice cream.
Sadly I didnāt get a pic of the main or dessert!
