SARDINIA HERITAGE SOUR #eldoradorumheritage2026 #eldoradorums I’m from Sardinia, an island shaped by two forces: the inland mountains and the sea wind. “Maestrale” is the wind that defines our coast it dries the nets, sharpens the air, and carries the smell of salt and wild herbs through the streets.
This drink is my heritage in liquid form. Mirto is the taste of home: mirto berries and leaves, the plant that grows wild across Sardinia and lives in our traditions, our celebrations, and our hospitality. I cold-brew the berries into a syrup to keep the perfume and the deep purple colour like dusk over the Mediterranean.
To express the coast, I use a bottarga fat-washed El Dorado 3 as a quiet layer of umami as savoury echo of the sea. The rum blend is my bridge between past and present. The brightness of a younger rum with the warmth of age bringing structure, depth, and a long finish.
It’s served with pane carasau, pecorino, and a touch of bottarga: the bite you would find on a Sardinian table.
