Rice: Prepare and chop your onions & peppers.
Sauté them with your favourite spices until soft and fragrant. Add chicken stock for a bit of flavour.
On the side, boil your rice until it’s halfway cooked, then drain the water. Add the rice into the sautéed onions & pepper and mix well. Let it simmer until fully cooked and fluffy.
Creamy Peri-Peri Chicken: Melt the butter in a pan. Add your peri-peri sauce of choice. Add a bit of honey and lemon juice for that sweet & tangy flavour. Pour in the cream and let the sauce simmer on low heat. Once the sauce is smooth and creamy, add your roasted chicken.
Let everything simmer together on low heat until fully coated and cooked perfectly.

Ingredients 🧾�1 or 2 lbs oxtail (depending on the number of people you are cooking for)�1 onion (chopped)�2 carrots (chopped)�2 celery stalks�4 cloves garlic (minced)�2 tbsp tomato paste�2 tbsp flour�2 cups beef stock�1 cup red wine

Instructions�Brown the oxtail in a pot and set aside. In the same pot, sauté onion, carrots and celery until soft. Add garlic, tomato paste, and cook briefly.
