NEGRONI IN THE SHADE 🌿
A white negroni shaped by the quiet intensity of gyokuro; a shade-grown Japanese green tea prized for its deep umami and lush fruit notes. We draw out its hints of honeydew and kiwi, layering them around bright botanicals for an expressive, fruit-toned take on the classic. The cocktail is served alongside the tea itself, with steeped leaves dressed in ponzu and enjoyed as a simple salad, bringing the experience full circle in one final expression of the plant.

Tahini master of Old Jerusalem.
This man operates the only stone tahini mill left in Old Jerusalem, and perhaps in the entire country of Palestine. I got to try a variety of his tahinis, halva, and fresh pressed sesame oil. All of which were incredibly delicious and by far the best I’ve ever had.
One of the many artisans I had the pleasure of meeting in the beautiful country of Palestine.
