Amaranth Mush with maple 🍁 I absolutely love to read books that not only widen my horizon about ingredients and cuisines, but also teach me about history. And this book is definitely one of them. I live in the Bay Area and I just learned through this book that Oakland is a home to 18,000 native Americans that migrated here after the World War II What’s also interesting is things or ingredients like amaranth that be so widely used in India actually came from the Aztecs who’ve been growing it for 8000 years Amaranth or Rajgira is a super food, packed with proteins, gives you more than your daily requirement of manganese, its drought friendly tough crop, making it ideal to grow pretty much anywhere Today’s recipe reminds me of Kheer but its vegan, only cooked with water and topped with maple syrup , fruits and seeds For the seeds, I made a fun granola/cracker and I will share the recipe 🔜 I am sharing this for our #ambassadorcookbookclub collab where we say thank you to the publishers like @harmonyrodaleconvergent for introducing us to such amazing books #kickapoo #indigenous #amaranth #protein

Ragi/ Nachni Ukad Superfood breakfast that’s ready in 15 mins Growing up in India, breakfast was often savory and not sweet. I miss that here so I try to make this dish at least once a week. It’s super easy to make great for your health and keeps you full all the way to lunch. Ragi is such a super food that I try and incorporate in our diet as much as possible. I also have a recipe for making super soft ragi roti, check that out as well. If you look at the nutrition for this recipe, not only are the macros good but so are micros. You can make Ukad with just rice flour or jowar ( we call it Ambil in Solapur) flour or Ragi and rice combination, it is good no matter which way you make it!! Methi chi bhaji / मेथीची पीठपेरून भाजी Some preparations are so simple and yet so classic!! पीठ पेरून aka sprinkling of flour is a way of making subjis in Maharashtra. The dry preparation lasts for a couple of days without refrigeration making it ideal to take it to the farm or travel. We make similar subji with bell pepper, cabbage, lauki and even okra. All taste great!! If you have any leftover, you can make an awesome tasting press toast( with some cheese ) for a lunch box I think it’s truly genius how grandmothers and moms make recipes with few things, taste amazing, recipe in the comments ! केळं पेरूची कोशिंबीर A simple guava banana Raita Does it need to be a ‘banging ‘ or trendy/ fancy recipe for it to taste delicious?? I feel we are forgetting simple things that brought us joy, simple, recipes, simple food, and beautiful memories associated with them. This Koshimbir is somewhere between Raita and dessert, Aai makes it so well and I love it ! This recipe is so easy but so delicious especially if you’re a guava fan. It also is an example that we never threw away food, there’s always a way to use up a little over ripened fruit in some way. Like Over ripened , bananas for banana bread, or Mangalore buns and so on.. Have you had it before , if not give it a try ! In many parts of India, there’s also a Navratri that’s celebrated which starts today Today’s recipe is a classic Marathi recipe. That’s often made on Gudhi Padwa. It’s perfect for the season, serve served often with Puri. It’s a treat that we all look forward to. Pastel de guayaba con queso It’s such a delish pastry, salty, sweet buttery it’s a perfect bite, and it’s so easy to make if you use store-bought puff pastry. First time I ate it at , a Cuban bakery in Florida, I fell in love so when I got some guava’s from a friend’s garden, I made the guava paste, the recipe for that is on my feed and made this pastry Recipe is actually quite simple and if you remember to tie your puff pastry and have the guava paste ready, all you need is 30 minutes to put this together !! Guava Jelly/Paste / पेरुची जेली जैम Guava is not easy to come by here in Northern California , especially right off of the tree, so when a friend Guavas from her garden, I had to make this. My Vasundhara Kaku used to make this, and we all enjoyed it! Its such an easy recipe and looks pretty too All you need is Guava Pulp, sugar and lemon juice, that’s it Notes: 1. The Guavas I got were a little brown from outside so I peeled them, if your Guavas are nice, you don’t need to 2. When you scoop out the centre with seeds, you can pass through the sieve and use it, but I have saved both the peels and center to make something interesting 3. If you want a jelly, stop cooking when if you drop a small amount of mixture in the cold water, a soft ball forms 4. 🕌Qamar-Al-Din 🇸🇾 🌙Ramdan Kareem! In our ramadan series of recipes around the world the next recipe is from Syria. Its actually a drink that made using the apricot leather, its refreshing and perfect for breaking the fast at Iftar In Istanbul I had this dessert made by a Syrian chef, who took this drink and combined with Mahlabi 🍮, I loved it so making that here. By the way I saw similar recipe on a blog, so tagging Jenan here on the post I love how it tasted but I think I will try with the Jardalu we get in India, the sweet ones next time Qamar-al-din means the Moon of Faith, I hope this Ramadan brings you all the blessings Recipe in the comments!! Ramadan Pidesi 🇹🇷 It’s Ramadan, each year I explore and share different Recipes from various parts of the world. Today’s recipe Ramadan Pidesi comes from Türkiye, pide is a flat bread and this one is made specially during the month of Ramadan Check out my other Ramadan recipes in the highlights above Recipe is quite simple, there are a couple of things to note 1. It’s a high hydration dough so handle it carefully, if it’s too sticky add a little flour but remember higher hydration means softer airy bread 2. Make sure the indentations are deep else the pattern you make will disappear during the baking :) As always recipe will be in the comments! Solapur Daalcha Khana - a humble wholesome meal I feel Solapur food is so underrated and I promise it’s incredible. It has influence from Andhra( Telangana), Karnataka and Maharashtra which makes it so totally unique There are so many dishes that are must eat / make, one of them is Daalcha Khana It made its way to Solapur from Hyderabad, you get both vegetarian and non- veg versions and both are just as good Key ingredients are of Dudhi ( Lauki) and Chuka( a sour green leafy vegetable) and of course Dalcha masala.
