THE WAY I COOK Vol. 1 Episode 6: Squab Part 2 This is the one. Everything on this plate is connected. Squab bones roasted in foaming butter. That butter carried through the crowns. That same butter finishing the pomme purée. Nothing done for show. It’s all for the flavour. A sauce done properly. Double reduction. Sherry vinegar. Madeira. Roasted bones. Real beef stock. Built the way it’s meant to be built. A rocher of celeriac custard. A rocher of pomme purée. The leg stuffed with chicken mousseline and wrapped in barbecued cabbage. The crown roasted on the bone and rested the right way. This is how I cook when I’m cooking the way I want to cook. Technique forward. Classical foundations. The kind of work that brings me joy. Local produce from Country Boy Produce. The suppliers I trust. No bullshit. Which is the way that I cook. This is the final episode of Season One. Season Two is already in the works. This isn’t a rehearsal, this is service. A look inside the rhythm of @lejeuneetjolie I wanted to empathize each scene with its own weight! They way I approach every restaurant service, I study the flow first. Where their stations are, how quick they move, where their eyes are looking. Within minutes, I start understanding the kitchen flow and that’s when I start shooting.
