Conceptual dining is more than just food, it’s a whole vibe. Food designed to create conversation, an experience to remember. Sometimes it’s hard for people to understand what they are signing up for when they buy a ticket to one of my events - so I thought I would show you.

For Of The Earth we wanted every element of the table to feel intentional, layered, and immersive. From the glassware through to the plates and cutlery, everything played a part in bringing the experience to life.

If you aren’t eating hot smoked salmon your missing a trick. I LOVE using this on my menus, normally I create a whip situation but this time I let my hot smoked @aorakisalmon fillets sing by leaving them as beautiful half fillets and serving w plum whip, black Doris peppered confit plums and serving w my ultimate fave @the_baked_dane crackers AD - event sponsors
