"Burnt to awaken, seasoned to hold - a garlic relish that commands its own presence!"
Some flavours are not softened by patience but strengthened by insistence! Burnt Garlic belongs to that school of thought - "garlic held to heat until its edges darken and its aroma takes on a deeper, more commanding presence."
At The Bar, Broadway Hotel, this method breathes life into the Burnt Garlic Chicken - crisp at the edges, assertive in heat and grounded in the distinct umami that gives Chinese cooking its backbone!
Patrons familiar with the house, along with those discovering it anew, are encouraged to walk in and explore the new menu - pairing this sauce, and the four others, with vegetable or meat condiments, and discovering how a single, deliberate act in the kitchen can set the tone for an entire palate!

Our owner, Raghav Sehgal, talks about āĻŦā§āĻļāĻžāĻ not as a season, but as an entire emotion. He believes that to truly understand the spirit of Bengal, you have to witness how the rhythm of life shifts right here in the heart of the red soil.
There is a hidden poetry in a āĻŦā§āϞāĻĒā§āϰā§āϰ āĻŦā§āĻļāĻžāĻ. Itâs in the quiet hum of the afternoon heat, the way the shadows stretch across our courtyard, and that unmistakable āĻŽāĻžāĻāĻŋāϰ āĻāύā§āϧâthe scent of parched earth waiting for the āĻāĻžāϞāĻŦā§āĻļāĻžāĻā§ to break. While the rest of the world is busy running away from the sun, weâre here inviting it in.
To truly feel this vibe, you need to be at Utsav. Weâve created a space where the āĻŽāĻžāĻāĻŋāϰ āĻāĻžāύ finds you the moment you walk through our gates. Whether it's the soulful breeze or the slow-paced life of Shantiniketan, we bring the essence of the season straight to you. Come, experience the poetic summer youâve only ever heard about in songs.

"Conceived where kitchens stood in communion, & kept because nothing better replaced it!"
Butter Chilli belongs to a chapter written not in books, but in kitchens where cultures crossed paths and learned from one another by instinct!
Born in Kolkataâs Chinese quarters, it brings together two certainties - "the richness of butter, long trusted in Indian cooking, and the pronounced umami of chilli that defines Chinese fare."
What emerges is not excess, but balance: a sauce with depth, warmth, and a character that settles comfortably on the palate. Its lineage traces back to the modern Indo-Chinese awakening shaped by Mr. Nelson Wang - where ginger, garlic, chilli, and soy set aside older rules and forged a new culinary language.
At The Bar, Broadway Hotel, Butter Chilli marks that progression - "A preparation chosen when the familiar feels insufficient, and the table asks for something fuller, more deliberate, and worthy of return."

"Smoke that remembers oceans, fire that recalls centuries & wings that bear it all!"
Before barbecue ever found a name on paper, it existed as a fire ritual in the Caribbean - Barbacoa, where meat met open flame, patience, and smoke that marked time rather than hurried it.
As the method travelled, it absorbed influence along the way - "French and British kitchens reshaped it with vinegar, spice, and balance, forming the barbecue the world recognises today."
At The Bar, Broadway Hotel, this lineage finds expression in the smoky barbecue wings - "a house signature built around a sauce prepared the Broadway way!" Deep, measured, and confidently distinct, the sauce carries heat, smoke, and meticulous mastery in equal measure.
It is this thoughtful interpretation that keeps the wings returning to tables across decades, proving that even global flavours find their truest character when shaped by a kitchen that understands patience as well as fire!

"From Bengalâs tables to Broadwayâs kitchen, a flavour long accustomed to being taken seriously!"
In Bengal, mustard never waited its turn! Known locally as the Kashundi - it entered the kitchen sharp, assertive, and deeply rooted - claiming its crown as the queen of pickles through sheer character alone!
At The Bar, Broadway Hotel, this same resolve shapes the plate - most famously in the Chilli Mustard Chicken and Fish, where Kashundi is not an accent but the anchor. Here, mustard is not an accompaniment but a point of view - one that honours local instinct while finding new expression within The Barâs enduring menu, proving that some flavours do not follow trends; they arrive, settle in, and lead.
Today, that same mustard travels further. Cauliflower, potato, and prawns take on its character - "each preparation shaped around its natural smokiness and bold register!" What began as a dip became a defining presence - so trusted that travellers often carry bottles home, taking a piece of Broadwayâs signature smack beyond the city!

"From Ancient Chinese Households to Kolkataâs Palate - The Sauce That Taught A City How Indo-Chinese Should Taste!"
With the launch of the new menu at The Bar, Broadway Hotel, a deeper look begins inside the kitchen!
Led by Mr. Raghav Sehgal, CEO of Broadway and third generation in hospitality, this series traces the sauces that shape the menu, starting with Soy. Often called the backbone of Chinese cuisine - Soy travelled from China to India through Kolkata, becoming central to Indo-Chinese cooking across Tiretti Bazaar and later, Tangra!
At The Bar, Soy is treated with restraint and respect - crafted to keep its character clean, balanced, and mindful of excess salt. It anchors classics like Chilli Chicken and Fried Rice, and now takes centre stage in the newly introduced Tangra Chilli Lamb, where its deep umami binds spice, meat, and memory into one assured preparation. This dish carries the legacy of Kolkataâs Chinese Eateries forward - grounded and confident!
Soy here is not just an addition - it is the constant that holds the cuisine together, guiding every thoughtfully prepared Chinese delicacy back to its roots.

LMB Batch of 2015:-10 year reunion.
Today felt like reopening a box of some of my fondest memories and reliving them. It was such a pleasure meeting so many batchmates and teachers after a decade. Nostalgia hit me like a familiar breeze, whether it was the hall, the field, or the classroom, each place reignited many forgotten memories. I'm glad to say I've still retained the kid in me, and this was just another reminder as to why I should never let him go.
P.S. Those who couldn't be here were sorely missed

âA Yuletide ritual, served with gelato and goodwill!â
A quiet December afternoon at 1937 became surprisingly splendid - children from humble households and belonging to St. Xavier's Church (Catholic), Bowbazar Parish, gathered, each choosing their favourite gelato while bowls of fruit and nuts awaited the mixing. They were also offered a warm, heartfelt lunch at 1937 - a meal they enjoyed with smiles and unguarded affection, filling the room with a gentle cheer no festivity could quite replicate. Mr. Raghav Sehgal watched over with gentle care - the inaugural Cake Mixing Affair at 1937 was more than tradition; it was a celebration of joy, innocence and togetherness - paying ode to a legacy the Broadway Hotel has upheld for generations.
Gelato itself traces its roots to Renaissance Italy, where it was first handcrafted in Florence and northern Italy as a refined treat for the nobles and dignitaries.
Over time it spread beyond Europe, carrying with it the simple promise of sweetness and cheer - now offered to young guests in a far-away city, miles from its snowy birthplace. At 1937, by offering gelato to the children from communities with limited opportunities, alongside the cake-mixing ritual, the honour is not just to a vintage custom, but to the belief that the spirit of bygone Calcuttaâs gourmet revelation can still live on as a new breath for the young, the hopeful, and the generations yet to come!

âWhere a centuries-old Christmas custom finds its home again in the heart of Calcutta.â
It wasnât just cake mixing - it was the quintessential December rite of old Europe, reborn on 7th December 2025 inside 1937 at The Broadway Hotel, with Mr. Raghav Sehgal, the first-generation sentinel of time at 1937 - guiding the unfolding affair like a proud keeper of memory.
He revisited 17th-century Stir-up Sunday, when families folded dried fruits, nuts and winter berries into grand bowls - not merely to prepare cake, but to announce the harvest season and the true arrival of Christmas. The tradition once crossed oceans and stepped into old Calcutta, embraced dearly by the Anglo-Indian community and carried with pride by the iconic landmarks - The Great Eastern, Fluryâs and their glittering peers - "where unity mattered more than spectacle."
This Sunday at 1937, that spirit returned just as it once was - children from St. Xavier's Church (Catholic), Bowbazar Parish, belonging to modest communities, were at the centre of the cake mixing affair - "nestled in blessings and warmth over applause or grandeur!" The bowls were mixed by the young souls not for ceremony, but for continuity - an honest ode to the customary Pre-Christmas rituals!
Because this is what 1937 stands for: "by going back, we are not simply recreating an era - we are retrieving what once made Calcutta the flagbearer of culinary revolution."
And if this inaugural Cake Mixing Affair marks the beginning of a renewed legacy, then those bowls werenât only preparing for Christmas - they were laying the groundwork for a hundred winters yet to come at 1937.
