A coffee shaped by precision and nature.
Grown in the highlands of Huila at 1200–1800 m, where cool nights slow maturation and build complexity in every cherry.
Finca Anaya continues a long family tradition of careful cultivation and experimental processing. This Ombligon lot undergoes controlled yeast fermentation to enhance its natural tropical character and clarity.

Papaya, dried pineapple, cranberries, white chocolate, grapefruit.

At this level, the Barista Skills Intermediate course follows SCA standards and is guided by certified professionals such as Tomas Bajoriūnas, SCA Trainer at Rocket Bean, ensuring theory is applied through real, measurable bar performance.
It’s not just about making coffee — it’s about understanding and controlling extraction.
Baristas focus on:
* how origin, variety, and processing affect flavour perception
* how grind size, dose, and extraction time act as precise variables
* how to dial in recipes consistently within SCA frameworks
Beyond espresso:
• milk texture, stability, and steaming technique
• sensory analysis and calibration
• workflow efficiency and service consistency
In SCA-based training, skill is not assumed — it is defined, practiced, and verified.

A vibrant fly-crop lot that captures the true diversity of Kenyan terroir.
Tasting notes: blackcurrant marmalade, chocolate cookies, pomelo.
This washed and sun-dried lot is carefully processed on traditional African drying beds, allowing clarity, sweetness, and complexity to fully develop.
Like a multifaceted gem, it reveals layer after layer of flavour — from deep dark berries to bright citrus freshness.
