Five Years with Sirinya Coffee Every year, we bring our barista team to visit Goh and Oil. Not just to see where our coffee comes from, but to understand where every cup truly begins. With Sirinya, a farm visit has never been enough. Year after year, we refine the process together, testing new variables and pushing quality higher. We have spent years developing their anaerobic fermentation lots alongside Goh, and this season we are introducing an ultra-special lot crafted exclusively for RISE COFFEE. Our collaboration runs deeper than processing. We have worked closely on farm management and varietal separation, and this year we are seeing real success with Bourbon, Typica, Java, and Syrina. For an origin still dominated by Catimor, true single-varietal Thai coffees are rare. Now, you will get to taste them. This year, Goh also built a new wet-milling setup that uses a submersible pump to draw cherries into the mill through a water-circulation system. It is faster, cleaner, and more efficient. Alongside last year's installation of the new gravity separation machine and the upgraded color sorter, the improvement in the cup speaks for itself. Last cupping of the year (and the most important one!) For years, this has been a dream. We’ve been working closely with our local partner to make Thai single-varietal coffees possible, in a landscape that’s been dominated by Catimor for so long.
