honey butter cornflake french toast

- 6 eggs
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch of kosher salt
- 8 tablespoons unsalted butter, plus more for serving
- 8 slices Texas toast or thick-cut brioche
- 6 cups cornflakes
- powdered sugar, honey, and flaky salt for serving

In a medium bowl, whisk together the eggs, cream, vanilla, cinnamon, and salt. In a shallow bowl, crush your cornflakes into fine crumbs (use your hands or just crush them right in the bag) and set aside.
Heat a cast iron skillet or griddle over medium-low heat and melt 1 tablespoon of the butter. Dip the bread into the egg mixture to coat both sides, then press each side into the cornflakes until you have an even crust.
Place the coated bread in the hot skillet and cook for 3 to 4 minutes per side. You’re looking for a deep, golden brown crunch! Repeat with the remaining slices, adding more butter to the pan as needed.
To serve, go in with a dusting of powdered sugar, a heavy drizzle of honey, an extra pat of butter, and a pinch of flaky salt!
