Chef Daniel created an incredible menu built entirely around ingredients grown, raised, harvested, and produced right here in our valley, paired alongside RAW Cider Co. ciders and supported by an amazing network of local farms and producers.

On Saturday May 9th, Raw Cider Co. is hosting a truly special event, “Rooted in the Valley”, A Cider & Farm Dinner, and you’re invited to join. This is a small, intentional evening built around the early bounty of the Willamette Valley and the people growing it. “This is the kind of dinner we love most, communal, relaxed, and grounded in place. Fewer ingredients, better sourcing, and a table shared with people who care about where their food and drink come from.”

How it’s made: Sparkling Perry. Removing the lees the perry has aged on in bottle for the last 14 months is called disgorging. This is a final step before corking, caging and labeling. There’s 2-3 years of work behind this (more if you consider the orcharding).
🍐 Pears 🍐 are difficult on every level; growing, harvesting, pressing, fermenting. We’re learning how to fight them less by taking notes from nature. We still forage wild pears and observe them in their natural wild environments. We’ve also started to graft wild pear varieties in the orchard. WHY 🤪?! First, they express flavor profiles you’ve never had in fruit and make excellent Perry. Second, we get to name them whatever we want (fun). Third, many pears in the US are European varieties, whereas these have that background but they’ve been ‘selected by nature,’ and have been surviving perfectly well in the wild with no irrigation, no pruning, no inputs. Our wager is they’ll grow great in our orchard with careful attention and minimal intervention. Don’t fight nature, Work With Wild. #sustainable #wildfruit #perry

Fine cider is made seasonally, following the cycle of nature.
Starting in spring, buds swell and slowly open, an early sign the orchard is waking up. Following this is a bouquet of blossoms brightening up the orchard and ushering in a host of pollinators.
Summer is the season of Observation. Apples grow, trees strengthen, and the fruit begins to develop structure. No rushing. Just steady care while we let the apples mature at their own pace.
Harvest follows the same philosophy. Apples are picked when they’re ready, often in stages, each variety on its own schedule. The fruit is pressed gently, and the juice is ferments slowly, with the native yeast cultivated by good orcharding practices. No heavy-handed fixes, mostly patience.
In winter, pruning brings the cycle full circle. Branches are cut back by hand to balance the trees. What we leave behind matters as much as what we remove. The cider slowly matures in these colder months.
Some ciders rest longer to age their tannic structure. Others are released sooner to highlighting their fruit character.
Every choice is intentional. Every step is connected to the orchard, the season, and the people doing the work. 🍎🌿🥂
