Trialling sourdough pizza for summer Art Walk evenings. Today's puzzle: par-baked volume vs toasty cheese. Blonde cheese is almost as offensive as blonde bread but that rise sure is nice... Maybe there's a perfect middle ground where we can have our slice and eat it too?
Savory scone trials in the bakery this week
Whole wheat & corn flour (nixtamalised or not?), plenty of good butter, yogurt, herbs from the back garden, a little preserved lemon.
Tropical plants, unsurprisingly, quite like the bakery. We were girdling this pothos a friend gifted us as a cutting when the bakery opened 3 years ago with the wire ties it was hung on so it's come down while I think up a new system for attaching it to the wall (it keeps trying to self-climb but, drywall not being tree bark, the roots just rip off the paint). Any suggestions, indoor plant enthusiasts? Other maintenance I should attend to while it's down? And wtf are these leaves the size of my face that it's starting to grow?

Next week we're going to put this spring abundance of fresh herbs to use in a savory scone experiment. Herbs: chive, oregano, rosemary, thyme, or anything else you might have growing wild in your garden and want to prune. Recipe: TBD with lots of butter. Shape: jelly roll.
This week's special: apple rye, made with organic @chimacumgrain rye, the last of last fall's gleanings, water, salt.
Next week we're thinking of putting the abundance of spring herbs to use in a savory scone.
Weekend projects: blocked the outflow and let the frog pond fill last night. Until the tree canopy closes in 5 or 15 years this catchment of all our uphill neighbors' fertilizer runoff and dog poop is going to be a sunny algal soup. What can I do to clean the water a little bit before it runs on to the sea? Reeds and rushes? Wapato and water parsley? No fish since it's only ~24" deep and I think it will dry out by mid to late summer.
You might think you don't like hot cross buns. You might have no idea what they are. They were, unsurprisingly, not a holiday staple in the atheist Jewish home of my childhood so I got to make up ours up unimpeded by nostalgia. The results may or may not be authentic but they are whole grain & sourdough, enriched with plenty of organic butter + @skyvalleyfamilyfarm eggs, gently spiced and generously studded with candied orange peel and currants, and really thoroughly delicious. Which is all to say, come try our HOT X BUNS!
Today and tomorrow at the bakery, tomorrow at the @bhamfarmersmkt and then never again until the next time I forget what a pain it is to manually divide tiny pieces of dough.
