pasture raised chicken - @thefoodfarmau
marinade (double for whole bird):
1 tbsp aleppo pepper
1 tbsp dijon mustard
2 tsp honey
5 cloves garlic
2 tbsp olive oil - @getgraza sizzle
1/2 whole lemon (including skin)
2-3 tsp salt
black pepper
blitz it all in a @nutribullet . pat chicken dry. rub marinade all over & under. get some marinade under the skin too. add roughly chopped sweet potatoes + tuck some quartered onion around the bird. donāt overcrowd the pan. drizzle with a bit more olive oil & sea salt. roast at 400f/200c on the middle rack (essential) for ~35-40 mins. flip potatoes half way. garnish with fresh parsley, dill & toasted sesame seeds.
best served with an herby chopped salad & cool tahini

itās actually wild to think i only started eating beef 2 years ago. growing up hindu, it was never part of my diet. then i went on a date⦠3 months of talking about food and he takes me to a steakhouse lol (hi, ty! š«¶š½) and iām like ok if weāre here, iām eating the steak. i loved it. my stomach⦠not so much. so i basically started microdosing steak into my diet. learning cuts, sourcing, fat, and flavour. now i fully geek out on this stuff. i think steak has become part of my personality tbh. my skin, my energy - never been better! but not all meat is the same, and once you start sourcing with intention - quality and nutrient density changes everything.
