Spent the day learning cheese-making from scratch at Heirloom Naga Centre 🧀 Didn’t think I’d enjoy getting my hands this messy, but it turned out to be such a fun and wholesome experience. From start to finish, everything felt so hands-on and satisfying. Also ps : They keep coming up with new workshops every month definitely a place I’d keep🫶

Worked with @queso.in An artisanal cheese brand from Dibrugarh, Assam, where I spent the last week of April curating a cheese experience menu. This one felt very exciting, because @ms_singhrajput is doing something really interesting which I genuinely hadn’t seen before- using local Northeastern ingredients to make her cheeses. Bhoot Jolokia Cheddar, Khar Morbier, Kaji Nemu Feta, an Assam Blossom Alpine-style and 20 different types. Khar is an alkaline used in Assamese cooking and watching it show up in a Morbier? That kind of thing is exactly why I love this work. It was a learning experience, sitting with so many different cheese styles and figuring out how to build a menu around ingredients I already love, in a way that felt like me. When it came together, it really came together Can’t wait for people to experience what Abhilasha has built with @queso.in So much love and gratitude for being a part of this. 🤍
