The little scavenger in me gets SO much satisfaction saving surplus fruit and turning it in to the goods…
When you see the absolute bounty these little trees produce- it’s so bloody incredible and inspiring- 🥹 I’m overwhelmed with gratitude… go you good things! We promise not to waste a drop!
Organic limes for shrubs and Verdita tonic- straight off the tree and in to the bottle - my favourite part of this job. 💚

We are coming in to citrus season and my favourite time to be out on the land, harvesting abundance and saving it for later.
Citrus goes into oh so many things that we make.
Whole lemons and oranges in our Fire Cider. Whole oranges in our Forest Cider.
Whole limes in our Verdita tonic.
Rosemary Lemonade shrub. Blood Orange and Turmeric shrub. Grapefruit and Galaxy Hops shrub. Mandarin and Pine needles shrub. Mango Lime and Jalapeño shrub. Lime Coriander leaf shrub.
Mandarin peel in our Energy Bitters. Orange zest in our Aromatic Bitters.
We do all this with the fresh local abundance of the Northern Rivers- lots of it I pick myself.

Sore throat first aid ⛑️ -A friend texted me this morning: she’s woken up with a sore throat and hoarse voice and has to sing later today.
1- total vocal rest, whispering only 🤫

I’ve always loved that history as an example of how we can truly take control of our food security by working with whatever we have around us. Even roof tops or planter boxes can be valuable garden growing real estate .
