As the buds begin to appear, it signals the end of another maple harvest season, known as âsugaring off.â In southeastern Quebec, the Sugar Maple (Acer saccharum) is tapped for roughly six weeks each spring. Canada produces 70% - 80% of the worldâs maple syrup, with nearly 90% coming from Quebec. To celebrate this rich heritage, communities across the province host festivals from April through early May. In the video above, maple syrup produced through our cooperative is being enjoyed by the team.

Maple trees take about 40 years before theyâre ready to be tapped. The number of taps a tree can handle depends on its size, health, and growth. A maple tree is ready for tapping when it reaches around 20cm in diameter (or 8 inches), with larger trees supporting up to a maximum of three taps per season.
These careful practices help protect the trees, so they continue to grow strong year after year, keeping both the forest and maple syrup traditions thriving.
