8-10 brown mushrooms (chopped)
1 tbsp olive oil
2 cloves garlic
1/2 tbsp calabrian chili peppers
1/3 unsweetened soy milk (or any plant milk of your choice)
1/4 cup pasta water
3 tbsp nutritional yeast
1 tsp black pepper
salt to taste
boiled rigatoni
chilli oil for garnish

tofu manchurian x
ingredients
-tofu manchurian balls
1/4 cup chopped carrots
1/2 cup chopped cabbage
5-6 brown mushrooms chopped
2 tbsp ginger chopped
200g medium firm tofu crumbled
salt to taste
- sauce
2 tbsp light soy sauce
1 tbsp ketchup
1/2 tbsp sriracha
1/2 tbsp white vinegar
1/2 tbsp agave (or brown sugar)
1 tsp chilli flakes
1 tsp white pepper
1 tsp msg (optional)
3 cloves garlic chopped
1/2 red onion chopped
1/2 red bell pepper diced
1/2 green bell pepper diced
2 tbsp neutral oil
tofu manchurian balls in the airfryer for 15-17 minutes with a light spray of oil at 210° celsius
you can freeze the extra tofu manchurian balls (before air frying) and airfry them whenever you’d like to eat them

- butter chick’n sauce
2 tbsp vegan butter
1 red onion
3 cloves garlic
1 green chilli
1 tbsp coriander powder
1 tsp kashmiri chilli powder
1/2 tbsp garam masala
1 tbsp sugar
3 tbsp cashews
1 can chopped tomatoes (400g)
1/4 cup water
salt to taste
blend the sauce - this makes a fair bit. i usually store in the fridge and use it for meal prep
- batter
1/3 cup plain flour
1 tsp salt
water (until you have a thick pancake batter consistency)
1 slice medium firm tofu
crushed cornflakes
iceberg lettuce
sliced onions
toasted bun
oil for frying
