Many hands make a cup of #coffee 👋 The final step for El Carmen (our family coffee) before reaching our roastery is the beneficio for dry milling. Here, the coffee is dropped off in parchment/pergamino, a protective husk. It’s weighed, the parchment is removed, it’s sorted for defects, it’s polished and, finally, it’s bagged up.

Since day one our importing partner, @royal.coffee.inc , has been instrumental in connecting us with a local exporter who joyously carries out the task of prepping our coffee for shipment. This year we had the privilege of working with Garras De Jaguar and @untao_drymill_oaxaca to get our coffee from Oaxaca ➡️ Oakland!

It’s a tough job loading up 5,768lbs of green coffee but someone’s gotta do it 💦 If you’re wondering when our family’s coffee, El Carmen, will be back on shelves, here’s the scoop 👀 Tios Anselmo and Nicefero have been working hard to get these bags down to the city from the mountains close to Santa Cruz, Ozolotepec, and yesterday the team loaded them up to drop off at the exporter.
