As you might have seen… the past 5 months, I’ve been learning something that genuinely scares me: getting in front of the camera.
Working alongside some of the best food creators at @mob gave me the confidence boost to try this out for myself…. and it’s also given me eveeeennn more respect for the work they do, day in, day out.

A very yummy breakfast 🍒
DAY 7: DARK FOREST GATEAUX CHIA PUDDING
Chia seeds get mixed with yoghurt & milk… refrigerated overnight & jazzed up with some cocoa powder the next day. Add a layer of yoghurt & cherries & it’s perfect !

Day 6: ✨ Chocolate Peanut Butter Stuffed Dates ✨
You’ll need (for 12):
• 12 Medjool dates, pitted
• 3 tbsp @manilife_ peanut butter (crunchy or smooth 👀)
• ½ tsp cinnamon
• ½ tsp nutmeg
• 150g dark chocolate
• 1 tbsp coconut oil
Toppings:
• Orange zest 🍊
• Shredded coconut
Method:
1. Slice your dates open and remove the pits
2. Stuff generously with peanut butter
3. Sprinkle with cinnamon + nutmeg
4. Melt chocolate with coconut oil until silky smooth
5. Dip or drizzle the dates in chocolate (messy = better 😌)
6. Place on parchment paper
7. Finish with orange zest, coconut & a little extra spice

DAY 5: Caramelised Onion & Peanut butter hummus 🥜
I used @manilife_ deep roast crunchy, 2 tins of chickpeas & caramelised 1 onion to bring this to life & it was delicious. I served with harissa roasted cauliflower… but eat as you like !
DAY 4: Savoury Granola🥜 made using @manilife_

✨ Ingredients
🥜 1 bag mixed nuts (almonds, cashews, walnuts), roughly chopped
🌻 ½ bag sunflower seeds
🥥 2 tbsp unsweetened shredded coconut
🥄 3 tbsp peanut butter (smooth or crunchy)
🫒 2 tbsp olive oil
🥢 1 tbsp soy sauce
🌶 1 tsp smoked paprika
🧄 1 tsp garlic powder
🔥 1 tsp cayenne or chilli flakes
🧂 Salt & black pepper to taste
✨ Method
- Toss all dry ingredients into an ovenproof dish
- Mix wet ingredients in a separate bowl
- Microwave wet mix for 30 seconds
- Pour over dry mix with your hands
- Bake for 25–35 mins, at 180° turning halfway
- Let it cool completely (this is when it crisps up 👌)
- Break into clusters
