INGREDIENTS
500g strong white bread flour
10g salt
25g caster sugar
10g instant yeast
30g unsalted butter softened
300ml warm full fat milk
Light olive oil
For the butter
150g unsalted butter
1 head of garlic, roasted
Fresh parsley, chopped
Fresh chives, chopped
Flaky sea salt and ground black pepper
Before you start: Roast the garlic at 200°C/180°C fan for 30–40 minutes until soft and golden. Leave to cool.
METHOD
1. Mix warm milk, sugar and yeast. Set aside for 5 minutes.
2. Add flour and salt to a stand mixer bowl. Make a well in the centre, pour in the liquid and mix on a low speed, increasing to medium for 1 minute.
3. Add the butter and allow the mixer to knead the dough for 5 minutes until smooth. Cover and leave to rise for 1 hour.
4. Whilst the dough is proving, mix softened butter with roasted garlic and the fresh herbs.
5. Divide dough into 20 balls and arrange in an oiled skillet. Cover and prove for 30–40 mins.
6. Bake at 200°C (180°C fan) for 25–30 mins until golden.
7. Brush generously with garlic butter while warm, finish with herbs and serve immediately. #CastIronCooking #DoughballsRecipe #ComfortFood #BakingAtHome

INGREDIENTS (per cocktail)
50ml elderflower liqueur
75ml prosecco
50ml soda water
Fresh mint leaves
Cucmber slices
Lime
METHOD
Fill glass with ice cubes and add in your fresh cucumber garnish
Add the elderflower liqueur.
Pour in the prosecco and top with soda water.
Add in your lime and fresh mint leaves and gently stir.
