The experience starts with a short walk to a waterfall where Chef Romo serves homemade ital soup. Ital food is a Rastafarian style of cooking that focuses on fresh, natural ingredients with minimal processed foods. A lot of the dishes are plant-based and cooked over fire.

From there, you can stay at the first waterfall or continue on the longer hike, which took us about 15 minutes. It’s a fairly easy hike overall, but you will definitely sweat a little.

After the hike, you come back to a full riverside meal.

What made this place stand out to me is that it’s not commercialized. Chef Romo is really the heart of the experience. He’s the one behind the food, the atmosphere, and overall vision of it all.

You would never have imagined that Jamaica recently experienced one of their most devastating hurricanes in recent history and yet they stand tall and resilient through it all.
That 4hour drive from Kingston to St. Elizabeth showed me all I needed to know about this island, authentic, beautiful and strong.
