Crab Linguine 🦀
These large Cornish crabs are sustainably caught in local waters and delivered live via @portlandshellfish . They’re then cooked and picked down in-house, before a crab stock is made from the shells and a crab butter from the brown meat.
@tarrynbingle and her team emulsify the stock with the butter, add in a bit of chilli and preserved lemon, then heat the fresh handmade linguine through the sauce.
Finished with fresh crab, parsley and a generous sprinkle of Parmesan - it’s easy to see why this linguine is a firm favourite here at The Salusbury.
