A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

New Thing - Pale Ale 4.6%
We’ve said it plenty of times before over our eight years as a brewery, but when the weather is turning a little warmer, and the nights are drawing out a little longer, there’s nothing quite like a crisp pale ale to toast a hard day’s work after a long stint at the brewkit.
As with many of our sub-5% beers, we’ve taken a whole load of inspiration from those first wave brewers of the UK craft beer movement, particularly The Kernel to brew New Thing. Utilising Citra Lupomax and a newly named Australian hop Luna on the cold side, this pale ale positively bursts with bright and spicy citrus notes to the max, before underlying notes of dark berries and fleshy mango dance in the background. A beer perfect for sessioning a couple of pints of in a beer garden, or kicking back watching the world go by on the decking - either way the best pairing for this pale is straight up summer sunshine.

Shapes Of Dreams - India Pale Ale 6.5%
When we said 2026 would be the year we were really reclaim our hype credentials and rattle the branches to bring ourselves back up into the conversation of the best hop-forward producers in the UK, we really weren’t lying.
We’ve set a pretty good path so far but we’re not done yet, and we continue on with Shapes of Dreams. Coming in at that magic 6.5% ABV where everything just works so well in tandem with one another, we’ve set the foundations of this beer off with a hearty hot side addition of Citra BBC pellets; specifically designed for hot side usage and bringing a bright, zippy bitterness to proceedings. Layered on top of this we’ve brought a four way dance of varieties that are massive in-house favourites here at Polly’s. Talus hits with a smack of pink grapefruit to accentuate the undercurrent of bitterness, before Citra Lupomax, Simcoe and Sabro bring ultra juicy citrus, stonefruit, and tropical notes to the party.

Low Energy - Pale Ale 4.6%
Low Energy in name, certainly no low energy in execution on this incredible pale ale. Krush, the former HBC 586 has been an absolute barnstormer of a favourite hop here at Polly’s since it first landed a few short years ago.
Having more or less free access to this Stateside slammer has gotten our brewers extremely giddy with excitement, and what better to show our love for a hop that has done so much in its short time being commercially available than a single hop showcase wrapped up in a super sessionable pale ale? Knocking it out of the park and then some, Low Energy packs a massive punch of tropical fruit salad sweetness beset by a smooth undercurrent of accessible bitterness for balance. Expect a big old swag bag of juicy mango, guava and passionfruit positively dripping from this pale ale backed up by a whisper of pithy citrus bitterness.

Liquid State - Pale Ale 5.1%
We bang on about it all the time here at Polly’s but there really is something special about our pale ales. Just north of the 5% mark, so robust enough to hold their own against some of our bigger beers, but still sessionable enough that we can enjoy a couple of pints after a long stint at the brewkit.
Liquid State is a straight up banger that has one thing in mind - sunshine and kicking back with a couple of decking beers. Our standard hazy grist has now been updated to include chit malt - unfermentable but absolutely packs the body and mouthfeel of a beer to next level proportions, backed up with a three way tango of hop varieties that inspire all things tropical. A dash of Citra Lupomax for clean and bright citrus notes, Nelson Sauvin for those spiky crushed gooseberry and sweet grape notes that only the Kiwis can do, and a final flourish of US titan Vista for soft white peach, apricot, papaya and tangerine notes.

Undercurrent - Mountain IPA 6.0%
It’s a tale we’ve told almost as many times as our name change story. The discovery and delight in trying our first ever Mountain IPA as guided by the master from Colorado himself Doug Odell was a landmark moment for us - hitting that perfect balance between the crisp and bitter drinkability of a West Coast IPA and the soft, hazy body of a New England IPA, we knew it was a style we wanted to bring back to the brewery and give a whirl to ourselves.
We’ve tried and tested our techniques since that first effort back in 2020 and we’re back again with our first Mountain IPA of 2026 in Undercurrent. Fermented out with our house LA3 strain to bring forward all those fruit-forward esters and delicately balanced with a hop bill of old school titans Centennial and Citra, with a new school flourish of El Dorado and Simcoe, this beer sings with a grassy, resinous bitterness, with an undertone of tropical candy flavours

Within Reason - Double IPA 8.0%
A strange flip has happened since those glory days of covid when everyone was chinning cans of DIPA in their back gardens. The demand was consistently for the strongest, the hoppiest, the most hype-forward and boy did we fill our boots. That wave might have hit a crest and broken now but we’re still of the opinion that when we break out a DIPA it’s go big or go home.
Within Reason takes this mindset and runs with it full force - classic pillowy soft Polly’s DIPA body with an intense dry hop charge utilising only the freshest and hype driven hops we can get our hands on. Supercharged with in house favourite Nectaron, Luminosa, Cryo Superdelic and Dolcita Lupomax, this huge beer is dripping with super soft peach, coconut, and passionfruit notes, paired with boiled sweets, cream, and raspberries before an bright whisper of citrus peel bitterness balances things.

Dethrone - DDH IPA 6.3%
Mosaic and Simcoe is a pretty well established combination here at Polly’s HQ - a combo that creates Lilt for grownups, and one we’ve utilised since our founding back in 2018 all the way to the present day. How do you advance on what could be close to perfection though? Lean into the new accessibility you have to the latest and most hype-forward hops is what you do!
We’ve mentioned on previous beers about our head brewer Joe’s passion for utilising different variations of the same hop, and the latest crop of Idaho 7 just screamed out to be used in this beer. Bringing both the T90 and CGX versions of this absolute banger from Crosby hops, this DDH IPA is pulsating with bright, fresh pineapple notes, backed up with juicy tangerine, berries, and passionfruit for an intense flavour-packed drinking experience.

A Passion For Fashion - Lime Gose 4.5%
The cult classic is back for another go-around! A Passion for Fashion made waves when we first brewed it back in 2019; with it being a 100% Lally at the wheel zinger. Our Scottish magician is a lover of all things face-scrunchingly sour, and we've let him completely off the leash again with this, one of our most talked about and yearned for beers of our entire five and a half years as an active brewery.
A mouth puckeringly sour gose packed to the nines with 115kg of fresh limes, a kilo of Anglesey sea salt, and just a sprinkling of lime zest to boot. Named for an in-joke in the brewery about our complete lack of fashion sense, the result is a super dry, juicy and zesty gose, not at all for the faint of heart. Welcome back, Pash!
