A guide to our favourite hikes around the city — just in case you’ve been spending too much time indoors.
We met Constantin, a Lisbon based chef and the reason we now make this spring green soup on repeat. He walked us through it and it couldn’t be more worth it.

Sauté 1 diced onion in 30ml olive oil until soft, then add 3 garlic cloves for a minute. Add 500g cubed celeriac and the chopped stalks of 1 bunch of asparagus (save the tips). Pour in 1L veg stock and simmer ~20 mins until tender. Wilt in 200g spinach, then blend until smooth. Return to a simmer, add 150g peas and the asparagus tips, and cook 3–4 mins. Finish with 5ml lemon juice, salt & pepper. Serve with the peas and tips on top.
Celeriac (cubed): 500 g
Spinach: 200 g
Veg stock: 1L
Green peas: 150g
Asparagus (tips kept whole): 1 bunch
Olive oil: 30 ml
Onion: 1
Garlic cloves: 3
