𼢠Kkakdugi (Cubed Radish Kimchi)
Ingredients:
⢠Korean radish, cubed
⢠Green onions
⢠Rock salt + raw sugar
⢠Kimchi base: onion + Korean pear, blended
⢠Fish sauce + salted shrimp (saeujeot)
⢠Garlic + ginger
⢠Gochugaru (Korean chili flakes)
⢠Rice flour + water
Directions:
1ď¸âŁ Toss radish with salt & sugar, rest ~1 hr.
2ď¸âŁ Make rice porridge (rice flour + water). Blend onion + Korean pear, then mix with fish sauce, salted shrimp, garlic & ginger.
3ď¸âŁ Rinse & drain radish, coat with gochugaru.
4ď¸âŁ Add green onion + kimchi base, mix well.
5ď¸âŁ Pack into a jar, press out air. Ferment 6â24 hrs, then chill.
đBeef Ragu Pasta
Ingredients:
⢠Beef short ribs, seared & tender
⢠Olive oil, carrots, celery & onion
⢠Garlic & tomato paste
⢠Dry red wine
⢠Crushed tomatoes & beef broth
⢠Fresh herbs (rosemary, thyme, sage)
⢠Bay leaves
⢠Heavy cream & parmesan
⢠Pasta (pappardelle or your favorite)
⢠Salt & pepper
Directions:
1. Sear and brown the short ribs for rich flavor.
2. SautĂŠ the onion, carrot, and celery, then add garlic and tomato paste.
3. Deglaze with red wine and scrape up the browned bits.
4. Add tomatoes, broth, and herbs. Simmer low and slow until the beef is fall-apart tender.
5. Cook pasta until al dente.
6. Stir parmesan into the sauce, then toss pasta until fully coated.
7. Top with extra parmesan and fresh herbs.
Matcha Basque Cheesecake đľâ¨
đ¤ Ingredients:
* 1 block cream cheese (room temp)
* ½ cup sugar
* 2 eggs + 1 egg yolk
* 1 cup heavy cream
* 1 tbsp matcha
* 4 tsp flour
* 2 tsp cornstarch
* pinch of salt
đ Instructions:
1. Preheat oven (hot â ~450°F / 230°C)
2. Mix everything together until smooth (no lumps!)
3. Pour into a lined pan
4. Bake ~30 mins until top is deeply golden/burnt
5. Cool completely, then chill
6. Slice + enjoy
