🥢 Kkakdugi (Cubed Radish Kimchi) Ingredients: • Korean radish, cubed • Green onions • Rock salt + raw sugar • Kimchi base: onion + Korean pear, blended • Fish sauce + salted shrimp (saeujeot) • Garlic + ginger • Gochugaru (Korean chili flakes) • Rice flour + water Directions: 1️⃣ Toss radish with salt & sugar, rest ~1 hr. 2️⃣ Make rice porridge (rice flour + water). Blend onion + Korean pear, then mix with fish sauce, salted shrimp, garlic & ginger. 3️⃣ Rinse & drain radish, coat with gochugaru. 4️⃣ Add green onion + kimchi base, mix well. 5️⃣ Pack into a jar, press out air. Ferment 6–24 hrs, then chill.

🍝Beef Ragu Pasta Ingredients: • Beef short ribs, seared & tender • Olive oil, carrots, celery & onion • Garlic & tomato paste • Dry red wine • Crushed tomatoes & beef broth • Fresh herbs (rosemary, thyme, sage) • Bay leaves • Heavy cream & parmesan • Pasta (pappardelle or your favorite) • Salt & pepper Directions: 1. Sear and brown the short ribs for rich flavor. 2. Sauté the onion, carrot, and celery, then add garlic and tomato paste. 3. Deglaze with red wine and scrape up the browned bits. 4. Add tomatoes, broth, and herbs. Simmer low and slow until the beef is fall-apart tender. 5. Cook pasta until al dente. 6. Stir parmesan into the sauce, then toss pasta until fully coated. 7. Top with extra parmesan and fresh herbs.
