Wolf Pizza is an artisanal wood-fired pizza truck based in Falmouth, Massachusetts that has been running since May 2017. The venture was founded by chef David Haddad. Throughout his culinary journey, Haddad worked in fine dining restaurants in places like New Orleans, Minnesota, and New York, before returning to his hometown of Falmouth. In 2016, he decided to leave his executive chef job in Cape Cod in search of something more. Haddad began to experiment with a naturally leavened dough recipe, he purchased a Fiero Forni mobile wood-fired oven from Italy, and came up with a menu that could delight any palate. Serving up his own spin on neo-Neapolitan pies, Wolf Pizza soon made a splash with appearances at various farmers markets, breweries, wineries, and festivals throughout Cape Cod and the south coast of Massachusetts. In Spring 2018, Haddad’s culinary friend Josh Dahl came on board and brought along his expertise from working at Pizzeria Locale in Boulder (CO). In addition to public events, Wolf Pizza can also be booked for private events such as birthdays and weddings.
I recently enjoyed some of Wolf Pizza’s delicious artisanal pies when I was visiting Untold Brewing in Plymouth. After looking over the menu, I decided to order the “Honey Badger” (ricotta, mozzarella, pistachio pesto, fermented garlic honey). I was very impressed watching the pizzaiolo performing his craft. He slowly and meticulously assembled each pie (about five or so at a time) at his work station. Then he would slide each one into the hot oven and they would be finished in a minute flat. This pizza was FANTASTIC! I loved the cheese blend as well as the flavor kick from the fermented garlic honey. This may have been my first time trying it, but I must say that pistachio pesto is the SUPERIOR pesto! The pizza paired well with my brews at Untold. I’m so happy that I could finally sample Wolf Pizza and I highly recommend them! I hope to run into them again on a future trip to the Cape Cod area! 🍕🪵🔥🇮🇹🍻
