Ingredients
DOUGH:
4 cups flour
2 tsp instant yeast
1/2 cup sugar
11/4 tsp salt
1/3 cup butter
1 cup whole milk
3 eggs
FILLING:
1 cup + 2 tbsp Dark Brown sugar
2 1/2 tbsp cinnamon
1/4 tsp allspice
1/4 tsp cloves
2/3 cup butter, softened
GLAZE:
2/3 cup cream cheese
1 cup powdered sugar
1 vanilla bean, scraped
1/4 cup whole milk
1/2 cup heavy cream to pour over rolls before baking
STRAWBERRY CREAM:
250g strawberries
2 tbsp granulated sugar
Zest of one lemon
CRUMBLE TOPPING:
1/2 cup flour
1/3 cup brown sugar
6 tbsp salted butter
DICED STRAWBERRY TOPPING:
250g strawberries
Instructions
CINNAMON ROLL:
Mix the flour, sugar, and salt together
Add in the butter (softened) and blend into dry ingredients
In a separate bowl mix together the milk, instant yeast and eggs
Combine with the dry ingredients
Mix for about 3 minutes, then knead the dough on a floured surface with your hands for about one minute
Grease a bowl lightly with oil and add dough.
Cover the bowl with plastic wrap and let it proof and rise in the fridge overnight. If needed day of, proof at room temperature for 90 minutes.
While the dough is proofing, mix together all the ingredients for the filling.
After proofing, take the dough out and roll it out on a floured surface. Roll it into a rectangle roughly 12" by 24". I usually try to roll it to somewhere between 1/4" and 1/2" thick.
Spread the filling over the dough, then tightly roll up the dough into a big log
Using a rolling pin, roll the log slightly longer, until about 30" long
Using a sharp knife or twine, slice the log into 15 rolls
Grease a 9x13 pan with oil or butter.
Line the pan with the cinnamon rolls in a 3x5 grid and cover with plastic wrap. Let them rise in this pan for about 30-60 minutes until they are just under doubled in size.
Preheat the oven for 350 degrees
Pour 1/2 cup of Heavy cream overtop all of the rolls just before you put them in the oven
Bake for about 15-20 minutes, then let cool for 15 minutes.
