If you’ve ever had the pleasure of meeting Nico Hammond, you’ll know exactly why we keep going back. Nico took over his family’s farm, Catalan de Las Mercedes (@fincacatalan ) in Chimaltenango, Guatemala, at a young age and has been quietly doing incredible things ever since. With a background in agricultural engineering, he separates every lot by variety and obsesses over his processing — and it shows.
