No more bánh mì till late May But we have Cà Phê on the weekends! 🍃 . Cà Phê Mắm: Fish Sauce Caramel Coffee…its like your favorite caramel macchiato, with salty umami / sweet (Chef Nhung’s favorite 🥰) . We plan on opening full time vvv soon…🤞 📸: @damnthaopham

We’re asked 100x a week when we will open @phe.nyc Well, we’re going to VN in April for a few weeks & when we’re back in May we hope to have a consistent schedule for coffee & bánh mì🐎 . We have been doing random pop ups this month, after 3 months of r&d , & was talking with a friend about the challenges of trying to recreate bánh mì in NYC…it has humbling, thrilling, frustrating, rewarding . Its every little change, from the micro-season NYC may be experiencing, the 1-2 degree change of the water / dough, the learning curve of operating Vietnamese machinery, and many more that are beyond my ability to observe (..for now) . We’ve landed on a formula that we’re vv happy with. It will take time & experience, to flow with the seasons changes and how it affects the dough. We’re so excited to bring another level of bánh mì experience to Forsyth St 🥖 ☕️

Coming around the mountain 🏔️ Been fun, stressful, scary, frustrating, rewarding, experience turning space into what it is. We’re probably asked 100x a day “when is the opening?” Tbh, still unsure. We love the unorthodox approach as we did with @mam.nyc , gradually (& low key) open our doors a couple of days out of the week so we can tinker with systems / logistics recipes. Was a fun build out, but now excited to build in a entirely different way ✨

Phê Phases 1-4 Our 3rd project on the block, 72 Forsyth Just like any build out, its filled with experiences & unforeseen variables… from DoB hurdles, pest control, crazy leaks… This was a full gut, from floor beams to ceiling beams. Its been amazing to transform this place and uncover its natural beauty & age. When we were approached about this space we knew it was a diamond in the rough 💎 We still have quite a bit of work to do, but we are very excited to share our progression & journey through this little reel! ☕️ 🥖
