At Letra House, Head Chef @Brandonjonesz and Sous Chef @peter_fiander focus on using seasonal, sustainable and producer-led ingredients. They also take a nose-to-tail approach, and you can often find this dynamic duo butchering whole animals, in house.
This week we had a beautiful lamb from @tathraplace , which will be on the menu in various forms like pintxos, tartare, pressed belly and house made sausages.

Okay now for the main bit! Me and my pal @peter_fiander are taking over @letrahouse for a couple Sundays in June! A pop up by mates, for mates!
We will be cooking a seven course French focused set menu and serving @cornutocontentovino wine (thanks @hazzybee !)
