🔥 Happy National BBQ Day!! 💥 Up on the Block today, we have one heck of a special! Our man, Pitmaster Ewan @patrick_gunning has been working on this for quite some time. Get here! 🔥 House made Smoked Porchetta We take the pork belly which is then butterflied and stuffed with fresh herbs and grated fresh parmesan cheese. Our porchetta is slow-smoked over post oak wood. We keep in the traditional Italian style by stuffing with fresh herbs, fresh parmesan cheese, and citrus. It is slow smoked over post oak wood and finished off hot to create a crispy, crunchy, cracklin outer crust. 💥 Served with a side of house Citrus Verde sauce. A fragrant blend of fresh herbs (parsley, mint, tarragon, and chives) is seasoned with brined capers, crushed red pepper, black pepper, and a touch of honey. The sauce gets blended smooth with extra virgin olive oil, and lemon juice and zest give it a bright pop! Perfectly paired with the (soon to be legendary) Stiles Switch Smoked Porchetta! 🔥 We will be slicing to order on the block this Saturday by the 1/2lb or grab it by the plate with your choice of two of your favorite sides! 🔥 We’ve got all the Smoked Meats and Good times heading into your NATIONAL BBQ DAY Saturday! How depression became the greatest motivator: breaking free from tall poppy syndrome, the sunk cost fallacy, choosing radical change over comfort, and discovering that we suffer far more in our imagination than we ever do in reality. This week I’m in Austin, Texas, where I sit down at Stiles Switch BBQ to hang out with my friend @patrick_gunning . Someone recently made a bold move. After finishing his journalism degree in Australia, Ewan felt completely lost and depressed about his future. But instead of forcing himself down a path he didn’t want, he did something most people only dream about: packed up his life and moved to Texas to learn barbecue from scratch. Five years later, he’s thriving as a pit master at Stiles Switch BBQ in Austin Texas, and he’s a completely different person from the guy I knew back home. We talk about what happens when you’re your own worst enemy, how rock bottom can be the launching pad for your best life, and why finding something you genuinely love changes everything. 🔊 🔥 The Smoked Picanha with Ewan Hardeman @patrick_gunning Every Friday, the Smoked Picanha at Stiles Switch BBQ takes center stage on the block. This special cut first came to the menu at the suggestion of pitmaster Ewan Hardeman. Ewan put the wheels in motion on this Friday special that was a nostalgic dish for him, and its been one of our most popular weekly specials ever since. If you are not familiar with the Picanha. This particular cut of beef, from the rump or sirloin cap, has been made most popular by the Brazilian live fire technique of cooking. Our process begins early in the week with the multi step prep and seasoning. We use a live fire cooking process to start, and we take it one step further by putting our Texas BBQ spin on it, by finishing it low and slow over post oak wood. Ewan, and the entire pit crew are super proud of this special we feature every Friday at Stiles Switch BBQ. We finish this off with a drizzle of our house made red chimichurri sauce a recipe perfected by Chris Crowley @mylifeinhiphop which features smoked red bell peppers and the classic flavor ingredients of a traditional chimichurri. It’s one pleasing bite that’s worth the trek over to North Lamar or Cedar Park on Friday. Yall make sure to say “G’day” to Ewan if you see him at North Lamar. “Behind the BBQ: The story of Stiles Switch BBQ.” If you are a fan of Texas Craft BBQ, storytelling, and beautiful cinematography, we invite you to take a moment to watch and share this documentary produced by one very talented film maker. When filmmaker, Marcus Frisby reached out to us months ago, we had no idea what a talented up and coming film maker this young man was. He simply said “this is a story that needs to be told. Stiles Switch is a place rich in history and deeply rooted in traditions of Texas BBQ...and I want to tell this story.” For 3 days/nights Marcus and his small team immersed themselves behind the scenes in the pit oom, capturing the ins and outs of what it takes to keep these fires burning 24 hours a day, 6 days a week.
