Pikliz 🌶 🇭🇹 A Traditional Haitian condiment that is usually served with all fried foods ! Including Bannan Peze (fried plaintains), Tassot / Griot (Fried goat/ fried pork), Poul fri (fried chicken), Fritay (fritters platter), pwason fri (fried fish), paté kóde (fried patty) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ✨Cabbage ✨Sweet bell peppers 🫑 ✨ Scotch Bonnet peppers ✨ Yellow onions 🧅 ✨Carrots 🥕 ✨Green limes ✨Garlic 🧄 ✨1/3 cup of White vinegar ✨ Maggi (all purpose seasoning cube) / if you don’t use Maggi, use 1 tablespoon of all purpose seasoning of your choice. ✨ 1 tablespoon of salt 🧂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ To prepare: 👩🏾‍🍳Shred your: Cabbage, Sweet peppers, Carrots & Onions 👩🏾‍🍳 Juice all of your limes & put the juice aside 👩🏾‍🍳 Add the lime juice, the scotch bonnet peppers, Maggi seasoning cubes, handful of garlic, the vinegar & salt to a blender ! 👩🏾‍🍳 Add the blended mixture to your shredded veggies & mix until everything is nicely incorporated. (The cabbage naturally start to soften & due to the salt pulling all the juices out of it. 👩🏾‍🍳 Taste your pikliz & add more salt if needed. If it’s not spicy enough to your liking, adjust it by adding more blended scotch bonnet pepper. 👩🏾‍🍳Add your pikliz to an airtight jar & store in the fridge ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This popular Haitian condiment is sometimes compared to a spicy coleslaw. Tamarind Sour 🇬🇾 I learned how to make my favorite Guyanese sour & here’s how I made it ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ✨Tamarind Pulp (you can also use fresh Tamarind & remove the seeds , strings & let the pulp soak , but this is the easiest way) I found this in the freezer section of my super market & let it thaw in my fridge. ✨Wiri Wiri pepper (I needed up using 7 of them) ✨Green seasoning (A blend of parsley, broad leaf thyme, fine leaf thyme, garlic, onion, scallion, basil, ginger & wiri wiri pepper! Go see how to make it on YouTube, or try to get some at a local West Indian super market.) ✨ 1 tablespoon of Amchar Massala or regular Massala ✨ Crushed Garlic ; I used 5 cloves of garlic ✨1 cup of brown sugar ✨ Salt to taste ! I added about 1.5 teaspoon ✨ 1 tomato ✨ 1/3 cup of white vinegar ✨1 tablespoon of Mantoux Scotch bonnet hot sauce ! (Or you can add more Wiri Wiri pepper) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ To prepare: I brought 1 cup of water to a boil, I added the tamarind pulp, green seasoning, crushed garlic, scallion , sugar & salt ; let simmer for about 10 minutes. Put the fire on low heat so that the water doesn’t evaporate too fast ! You can also add more water to adjust ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I took it off the heat, then added 1 tomato blended with more Wiri Wiri pepper & 1/3 cup of white vinegar to make it just a bit more sour. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is a taste as you go recipe. The tomato definitely did the trick to get the saucy consistency I was looking for. Adjust salt & sugar to taste ! & white vinegar can help adjust to make it more sour as needed ! This tasted just like the Tamarind sour I get from the Guyanese restaurant near me ! & yes I had a sample and kept tasting to adjust mine ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I added it to a jar, once cooled, I put on the lids & put it in the fridge to store ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This delicious Guyanese Tamarind sour pairs well with so many Guyanese dishes ! Bruschetta 🥖🍅🧀🍃 Pronounced : Broo-skeh-tuh A super delicious Italian Appetizer that can be served as lunch or appetizer ! I decided to make it for lunch ! 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ •Bread 🍞 🥖 : Toast the bread of your choice ! Baguette is usually used, but I went with sliced bread ! Once the breast is toasted, rub some garlic on the hot toasty bread ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ •Next is the tomato mix ! 🍅 Chop some tomatoes, add some olive oil, fresh garlic paste , salt, pepper and a dash of oregano (dried or powdered oregano) to taste ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Basil 🍃 : Add fresh basil to the tomato, mix well and add it to the toasted garlic bread ! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mozzarella 🧀: Next, add fresh mozzarella on top of the tomato basil mix ! Doro Wat ! Berbere-Spiced Chicken & egg stew !🍗🥚🥘 Ethiopia’s National Dish ! 🇪🇹 Normally served with Injera or rice ! (I didn’t have Injera so I used roti 🥲) Recipe : Chop 4-6 purple onions and add it to a pot on medium heat, cover and allow the onions to sweat ! (Don’t add water) Mix often so that it doesn’t burn ! It takes about 45 mns - 1 hour for that process ! When the onions start looking more brown, add some olive oil and allow to cook for about 10 mns Add ginger & garlic paste to the cooked onions and mix well ! Allow to cook for 5 mns! (I recommend using fresh ginger & garlic) To the onions, add 1 small can of tomato paste and 1-2 tablespoons of Berbere! Mix well ! (If you have ghee, add it at this point) Berbere is a blend of many different spices such as chili, coriander, garlic, ginger,fenugreek & many more Ethiopian spices) ! Add your chicken to the pot & mix ! (I prepared the chicken by removing the skin, fat, & washing it with lemons, vinegar & then rinsing it ! I also cut some slits in the chicken so that the spices can get very deep in the meat !) I recommend cleaning your chicken while the onions sweat) Add a little bit of water to the stew, mix well then cover to allow it to cook ! (I added a splash of water in the blender I used to make my garlic & ginger paste & added that to the stew) cover your pot so that the pressure can cook your chicken faster! Boil your eggs while you’re preparing your stew so that it’s boiled when you’re ready to add them when the chicken is cooked ! Once boiled, de-shell and make slits in the egg so that the slice gets in there! Add to the stew ! The last spice I sprinkled is Mekelesha (it’s a finishing spice that’s normally added at the end, made with cardamom, cinnamon, cloves and other spices ! Add just a dash! The last thing I added was a little bit of butter but the recipe normally uses Ethiopian Ghee (clarified butter and spices infused) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Thanks for watching ! Garlic Mushroom Spaghetti 🧄 🍄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: Wash your mushrooms 🍄 Crush your garlic 🧄 Sauté your garlic , add mushrooms & thyme Once sautéed , set mushrooms aside & start working on creamy sauce 🫕 (While working on that, boil your choice of pasta) For creamy sauce 👉🏾 Melt butter 🧈, add some flour & milk Whisk well and add some black pepper, salt & all purpose seasoning , To the white sauce, add your sautéed garlic mushrooms and mix well !
