At Paradise Soho’s new residency, Miris y Maíz, Sri Lanka meets Mexico in a kaleidoscope of tacos and rotis filled with the spices and flavours that define both cuisines. “Sri Lankan and Mexican are two very playful and exciting cuisines to explore - they both use chillies in various forms, have lots of citrus and combine a range of spices and ingredients such as coconut,” Paradise founder Dom Fernando tells Broadsheet. Expect papadam tostadas loaded with guacamole, plus tacos and paratha rotis filled with 12-hour coconut-braised brisket, coal-roasted prawns with ancho chilli and coffee rub and devilled buffalo milk paneer with pickled Kent strawberries. The residency runs until August 30 at Paradise Soho. After a stellar preview last month with @eatwith.sera - Miris y Maíz is back for a six-week summer residency, blending bold Sri-Lankan and Mexican spices, flavours and textures, with standout British produce. Expect the same quality and creative energy that we’ve built at Paradise, with a combo for the summer that you didn't think you needed. We’ve taken the fire and soul of two of the world’s most flavour-forward cuisines and created something very special: finger-licking spicy plates, killer cocktails with plenty of chilli and heat - the kind of food that will keep you coming back round-after-round. This summer is going to be fun and punchy - and we’re here for a good time, not a long time. Our a la carte taco/paratha menu will run for six weeks from Thursday 24 July to Saturday 30 August. Earlier this year, Service95’s @piabrynteson joined @paradisesoho founder Dom Fernando and his team on a whirlwind trip to Colombo. In this week’s Travel Issue, she documents their time together – from dawn fishing trips to hillside tea tastings – and explores the deeply rooted mission behind @opendoorpolicylk , Dom’s latest project opening in Sri Lanka this July: a 10-seat chef’s table restaurant that aims to transform not only the island’s food scene, but also its future.
