Today, he shares something close to home. His mum’s Curry Goose Stew. This is comfort food, Top End style 👇
Curry Goose Stew
• Start with onion, garlic, ginger, curry leaves, basil, salt and pepper
• Sauté until fragrant and golden
• Add chopped magpie goose and Keen’s curry powder, coating well
• Stir through carrot and celery, add water and bring to the boil
• Add potatoes and capsicum, simmer until thick and rich
• Cook low and slow until the goose is tender
