Sake for Wine Lovers #2 — Gensaka Brewery
@gensakabrewery_co
Sake for Wine Lovers is an ongoing series dedicated to sake—created for people who already love wine.
Each edition explores a different theme: a single producer, a specific style, pairing with food, collaborations with restaurants, and more.
This time, we explored terroir-driven, domain-style sake from Gensaka Brewery through a wine-based lens—and the atmosphere was lively from the first pour.
Guests tasted seven different sake styles and explored how production, structure, and context shape perception: aroma, texture, and how a sake feels at the table.
Cheese and small bites (tomato-based meatballs) were served to test pairings beyond Japanese cuisine—and the room quickly turned into conversation. Guests shared what they loved, what surprised them, and which combinations felt most “right.”
Glassware was an essential part of the experience. By switching between ochoko and white wine glasses, guests could immediately feel how aroma and texture opened up—and everyone compared notes in real time.
The group included both first-time sake drinkers and guests already familiar with sake, and the questions kept coming throughout. The energy in the room made one thing clear: sake is genuinely enjoyed, discussed, and embraced outside Japan—more and more.
