Venison Tartare red shiso, radish, preserved raspberry, egg yolk, rye Raw venison loin is diced and dressed with preserved breakfast radish and a red shiso vinaigrette. It is then put into a tartelette shell that is made from 50% rye flour and 50% ap flour. Over the tartare is a preserved raspberry and red wine gell, thats been diced into small cubes. Draped over the top of the tart is a thin sheet of egg yolk, sous vide to create its shape. Now available at Ore Hill.

Beef Tartare, Ramp, Caviar, Caramelized Cream, Brioche @rockcobblefarm Randall Cattle beef tartare is seasoned with pickled ramp bulbs, meyer lemon zest, and preserved ramp green aioli. Toasted brioche is the base while Osetra Caviar sits on top. Steelhead Trout, Miso, Red Wheatberries, Meyer Lemon Hudson Valley Steelhead Trout is poached in a red wheatberry miso and meyer lemon vinaigrette. A red wheat berry porridge is made with shallots, white wine and mushroom stock. Preserved meyer lemon is folded into the porridge just before serving.
