3 cups brioche bread, cubedā£
3 cups sourdough bread, cubedā£
1 lb mild italian sausageā£
12 oz mushrooms of choice, slicedā£
3 celery stalks, dicedā£
1/2 red onion, slicedā£
8 fresh sage leaves, choppedā£
2 tb fresh thyme, choppedā£
1 tsp kosher saltā£
1/2 tsp ground black pepperā£
6 eggsā£

1 cup gruyere cheese, finely grated (optional, but highly recommend)ā£
1/4 cup chopped chives, for garnishā£

Preheat oven to 350F. Cut bread into cubes and place in the oven for 20 minutes to dry out. While the bread is in the oven, heat a skillet over medium heat. Saute the italian sausage until almost fully cooked through, then add in the mushrooms, celery, onion, sage, thyme, salt and pepper. Stir and cook for 6-7 minutes, until the mushrooms have cooked down and the sausage is fully cooked through. Remove pan from the heat. And at this time, bread should be coming out of the oven. Next, whisk together the eggs in a medium bowl and add in two containers of Oolie Garlic & Herb Dip. Get out a 9x11 or 9x9 baking dish. Grease the bottom with oil spray. Add half of the croutons to the bottom and half of the sausage mixture. Pour half of the egg mixture on top, followed by the rest of the croutons, meat mixture and egg mixture. Sprinkle the cheese on top. Cover with foil and bake for 20 minutes, then remove the foil and bake for another 20 minutes. Remove from oven, garnish with chives, cut into squares and enjoy!
