About the Artist
•
Eileen Olivieri (she/her) is an award-winning artist based in Santa Fe, New Mexico. She exhibits her work nationally and internationally and in diverse venues such as the Castle of Saint George in Kefalonia, Greece, an ancient fresco gallery in Bienno, Italy, the Whitney Museum of Art in New York City, and the abandoned Sacred Heart Mission Church in Ruidosa, TX.

In 2024/2025, Olivieri was a Visiting Artist at the American Academy in Rome as well as at the Borgo Degli Artisti 2.0 in the foothills of the Italian Alps (Lombardy). Select awards include: a faculty research grant from the American Indian College Fund, an Idea Fund grant, and the New Visions Film Award. Currently, Olivieri is developing an independent film titled Mink River, based on the novel of the same name, teaches Queer Film/Text at the Institute of American Indian Arts in Santa Fe, New Mexico and is planning an exhibition in Greece/Italy for later this year.

About the producer

Sicily remains one of the most important places in the world for quality extra virgin olive oil. The island’s varied and disparate landscape contains so many regional culinary variations, yet all of them are linked through EVOO. Numerous olive cultivars are spread akimbo throughout six DOP zones including the Biancolilla, Cerasuola, Tonda Iblea, Giarraffa, Moresca as well as the famed Nocellara del Belice - also known in table form as the Castelvetrano olive.

Master miller Salvatore Cutrera oversees the multi-generational family production. He insists on hand-harvesting when the olives are young, green and healthy. The fruit is then coddled to the mill within four hours and cold-extracted using a state-of-the-art Pieralisi DMF Leopard 8. He assured me “to produce a quality oil, it is important to make every step correctly: cultivation, harvesting, milling and bottling. If one step is done incorrectly, the oil is ruined forever.”

About the oil
•
Oils produced from early harvest Nocellara olives tend to be fruity and vibrant, with hints of green apple skin or green tomato leaf, ending with a robust, peppery finish. The cause of this intense peppery sensation - considered an attribute of high quality olive oil - is oleocanthal, a natural phenolic compound that has both anti-inflammatory and antioxidant properties. These oils are quite assertive when used as a finishing oil and can add to the food a pleasing zesty element, pairing well with grilled fish, pizza, eggplant parm and seafood pastas, among many other simple culinary delicacies. We recommend pairing it raw on top if your favorite dish, so its flavor remains separate and distinct.

About the Producer

Gregor Lisjak continues his parents’ legacy as Slovenian olive growers with a small olive mill they began thirty-five years ago. Each season they challenge themselves, dedicating the same effort to achieve the best possible results from the conditions that nature provides. We are pleased to offer Mr. Lisjak’s oil as Grove and Vine’s inaugural Slovenian release.

Though Slovenia experiences a variety of climates, ranging from the cold Alpine regions to humid plains and from inland areas to the coastal Mediterranean climate, the conditions suitable for olive cultivation are found exclusively in the country’s southwest, where Lisjak operates.

Without an irrigation system they grow 1,600 trees, ranging from native varieties to olives typically found in other countries - including Maurino, Itrana, Buga, Bianchera Istriana, Frantoio, Leccino, Pendolino, and Rossignola. This combination gives their oils a unique character and identity.

The olives are harvested when still green and not fully ripe, early in the season. Harvesting can only be done by hand in the old olive groves, whereas in the newer plantations they strive to follow all requirements that allow for mechanical harvesting. The oil is extracted using state-of-the-art centrifugal extraction machines, ensuring the temperature does not exceed 25 degrees C. Immediately after extraction the oils are filtered and then stored in stainless steel tanks under inert nitrogen atmosphere. This quality control prevents oxidation and helps preserve the oil’s vibrant volatile aromas.

This supremely clean oil has undertones of freshly cut grass and herbs, a hint of green almond, balanced bitterness and a delayed elongated peppery finish.
