One activity featured in our month-long Mediterranean Table Challenge is to learn about traditional dairy and how it fits into heritage diets.
In the Mediterranean, dairy products were often fermented to prolong their shelf life. Fermentation is process by which "friendly bacteria" prevent the growth of harmful bacteria.
Common fermented dairy products in the Mediterranean include yogurt, such as Greek Yogurt and labneh as well as traditional artisan cheeses, such as Feta, Manchego, Parmigiano Reggiano and Halloumi.
