For #melbournedesignweek 2025 I had a wonderful opportunity to create some truly memorable experiences for some select guests.
As part of this I recreated some edible Billy Buttons. Being a delightful little Australian native I am rolling them out again for more people to try at our AUSTRALIANA EXTRAVAGANZA opening night on Friday 18th July 6-9pm. Tickets recommended even though it’s free (link in bio).
Gallery will be open with the art element also on Saturday 19 and Sunday 20 July 11am-3pm.

Don’t know if people know but I hold both a science and an arts degree from many life times ago. I am now constantly seeing them entwined after having gone down the road of studying some Food & Experiences Design.
A pineapple is not just a pineapple. It is burnt, pulped, mixed, strained overnight and mixologied to make the most wonderful cocktail. This drink is days in the making.
That fish skin is definitely ‘skin off’ but how is it treated? What does it become? It is scraped, dehydrated, deep fried and seasoned to become an exquisite texturally delicious morsel for you to experience. It was literally weeks in the making.
Those eggs? Well they don’t just end up the right shade of devils egg pink without exploring ratios and time spent.
Next time you eat. Stop Collaborate and Listen..wait, no that’s not it.
