Boil baby potatoes 15–20 mins until tender, drain + cool slightly 2. Add NUFFIN, apple, radishes + half the herbs, fold gently to coat 3. Flake in half the salmon, season + toss gently 4. The galette era is here in time for Mother’s Day and NUFFIN Chive & Onion is running the show 🥧 Roast pumpkin, caramelised onion, hazelnuts, pecorino and a generous dollop of NUFFIN - all wrapped in golden, flaky pastry. cosy season sorted. ⏱ 10 min prep | 1hr 10 cook | serves 6 🛒 What you need: 400g pumpkin 1 red onion puff pastry 50g hazelnuts 50g pecorino fresh chives 200g NUFFIN Chive & Onion Dip 👩‍🍳 How to: 1. Roast pumpkin + onion with olive oil, honey + thyme at 200°C for 25–30 mins 2. Scatter hazelnuts, pecorino + chives over pastry, leaving a border 3. Arrange roasted veg on top, fold + pleat the edges, brush with egg wash 4. Bake 35–40 mins until deeply golden 5. Mother’s Day grazing made easy… 👇 Whether you’re celebrating your partner, heading to see your mum, or gathering all the mums in your life, here’s how to make the perfect Mother’s Day grazing board for a relaxing afternoon. I’m using my favorite Nuffin dips (Feta and Basil, Chive and Onion, and Hummus) served with Crudités, a mix of wholemeal crackers and lavosh, blue cheese, muscatel grapes and apple slices. Slow cooked meals always remind me of Sunday afternoons at home. This is my twist on a classic slow cooked recipe, made with a little help from @nuffin_dips Hommus, because mum deserves a dish that shows how much you love her 🫶🏼 Slow cooked middle eastern inspired beef 🫶🏼 Ingredients: - 200g Nuffin hommus - 600g chuck steak - 2 cups chicken/beef/vegetable stock - 2 tbsp sumac - 1 tbsp smoked paprika - 1 tbsp ground coriander - 1 tsp cumin - 1 cinnamon stick - 1/3 cup maple syrup - 420g chickpeas (1 standard can) - 1 brown onion, sliced - 4 garlic cloves, minced - 1 tbsp red wine vinegar - 1 cucumber, cut into small cubes - 1 pickled red onion, cut into small cubes - Fresh parsley to serve Method: 1. Bring chuck steak to room temperature, pat dry and season generously with salt & pepper on both sides. 2. Preheat oven to 160°C 3. Heat a drizzle of oil in a large Dutch oven over high heat. Add the steak and cook for 3 minutes on each side. Remove and set aside. 4. Reduce the heat to medium, add the sliced onion. Sauté for 1 minute. Use a splash of red wine vinegar to deglaze the pot then add the garlic and the ground spices. Mix for 1-2 minutes before adding the stock, maple syrup and chickpeas. 5. Return the beef to the mix. Add the cinnamon stick, cover and transfer to the oven. Bake for 2.5 hours, check that the meat pulls apart easily, if not, place back in the oven for another 30 minutes. Remove the cinnamon stick before serving. 6. While that’s cooking, mix together the cucumber and pickled onion in a bowl. 7. To serve, evenly spread the hommus onto a large serving tray. Place the chickpeas directly on top, shred the beef with two forks then place it directly on top of the chickpeas. Then finish off with the cucumber/pickled onions and some fresh parsley.
