Born in the countryside around Valencia, paella was originally a humble farmers’ dish: rice cooked over an open fire with whatever was at hand, with saffron giving it its now-iconic golden glow. Practical, generous and made to be shared, that spirit remains at its heart. Over time, the dish spread into southern France, where it became closely associated with summer fêtes, seaside holidays and large communal meals, often cooked in vast pans for hundreds of guests.
