Eleven years ago, I had a dream: to create a little neighborhood spot built entirely around one of my favorite foods, the humble egg, focusing on the egg sandwich, a quintessential NYC staple.
In 2014, Egg Shop Nolita opened its doors.
I remember that first weekend, hoping someone would show up, and to our delight, we had folks waiting in line. Something about this little restaurant resonated with people from all over the world. It was pure magic, and something I’ll never forget.
From day one, I had the incredible fortune of working alongside Chef Nick Korbee, whose creativity and vision helped shape Egg Shop’s menu and voice, and whose friendship over the years has meant more to me than I can say. From our very first tasting to The Egg Shop Cookbook that found its way into kitchens around the globe, Nick’s imprint is everywhere.
To my husband, Demetri, thank you for pouring your heart, time, and talent into making this dream of mine a reality, and keeping it alive all these years. You did everything in your power to support me, and I couldn’t have done this without you.
Egg Shop is where I met some of the most talented, hardworking, and creative people I’ve ever known. Our team, past and present, has been the true heartbeat of this place. Together, we’ve served guests from across the globe, published a cookbook, and built a community that stretches far beyond Nolita.
It’s with so much love (and more than a few tears) that we share: Egg Shop Nolita’s last day will be Sunday, August 17th - 11 years almost to the day of opening. This isn’t a funeral - it’s the celebration of full life lived. We hope you’ll come by over this next week so we can thank you in person over one last runny yolk, crispy hashbrowns, or your favorite sandwich.
