Her parents fled Vietnam. She grew up in London. Then she quit law and took her mum’s recipes to the streets.
Chau has been running @nhatrangkitchen for over ten years — bánh mì, lemongrass chicken, crispy roast pork on a good day at markets across London, seven days a week. The stall is named after the coastal Vietnamese city her mum’s family are from. That detail matters more than it looks.
We spoke with Chau to hear how it all started, what people keep getting wrong about Vietnamese food, and why serving it every day has changed how she sees her own culture.
