Wedding bells on the wharf of Museum 't Kromhout, this weekend!
One large centrepiece cake: Olive oil sponge cake, with a layer each of lemon curd and thick vanilla custard, decorated with vanilla frosting and bejewelled with all the berries of the season.
+ three passion fruit cheesecakes, playfully piped!

Guess who's back!
Gourmet Toasties had a sneaky 3 year anniversary last month, and it's never too late to celebrate 🥳
Sunday the 24th, rain, hail or shine, come and join us for the usual get up. In light of the celebration we may just take a stroll down memory lane and make our personal favourites. From our first event, we introduced the cheese fondue toastie with honey fermented garlic served with an apple compote, and we've had requests for it ever since.
As usual there will be 2 toasties made by chef @nataliakerbage , made with cheese from @kaasbuur_west . Dine in, or take away, but we always have a wine pairing from @bureauwijnwest 🍷

Things I ate on top of my puzzle this week.
Sesame loaf from @bakkerij_hoteldegoudfazant , toasted in loads of butter. Topped with whipped feta and a fiery salsa made from charred jalapeños, red chilli, red peppers and home-made rosé vinegar from leftover wine (if 'leftover wine' is in your vocabulary, it's the easiest thing to make.)
Same salsa adorning the best asparagus in the country, from @dewitasperges . Wow, the most flavoursome asparagus I have ever tried. Apparently people wait in line for hours to get some of this white gold, but lucky me @drawswords gone went and got 'em straight from the farm in Veghel. They were lightly fried and then simmered in milk with salt, garlic, bay leaf, peppercorns and butter. All that on a bed of pillowy polenta 👌
Hot porridge + cold milk = ! Add rhubarb compote, granola and strawberries also from @dewitasperges . Breakfast of champions!

Crumpets!
Back home in Australia crumpets are, well, something of a packaged food. They come in a sleeve, they last way too long on the shelf but always toast up to perfection.
Making them was quite a journey. There's a lot of troubleshooting involved. I learnt not to go rogue (something quite difficult for me). During more than one recipe test I added some sourdough starter to amp it up, but for some reason this made them stick to the ring every time, no matter how well-greased the rings were. The viscosity of the batter was another point of contention. It's a super wet dough, and this ensures that no matter what the interior will always be fluffy, pillowy and totally harmonious with the lashings of butter that melt down into each nook and cranny.
Butter is mandatory. Pictured here are the 2 options I served over the weekend at @friedhatsfukucafe for our Easter brunch/bake sale.
● Vegemite butter + Olde Remeker cheese
● Croissant butter + champagne rhubarb compote

However you spell it, however you make, it's a treasured dessert from the Levant.
Said to have originated in Nablus, Palestine, I grew up eating it the Lebanese way. Crispy shredded pastry, cheese, more cheese and a layer of semolina pudding all doused with scents of sweet orange blossom syrup.
Lucky me, I got to flip out 6 trays that night.

The theme, incidentally, felt like nostalgia. A couple of these recipes I've held close to my heart for 15+ years, while the others are purely a taste of home I was hoping would hit the spot during this very homesick period.
Sticky date cake, lemon cake with yoghurt frosting, apricot and sesame cookies, baklava and my first time making atayef!
Making the pancakes was meditative, and hypnotic because they *must* be done one by one. Although, it did take some troubleshooting to get the leavening just right to create those signature bubbles. They're filled with ashta (a sort of orange blossom, semolina pudding) then face-planted into emerald green crushed pistachios. Before serving they get doused in orange blossom syrup.
